Just inland of Australia’s Great Dividing Range we are in a sweet spot for olive oil quality, with dry and warm to hot summers for fruit ripening, and crisp, cold autumns and winters to preserve the flavours and antioxidants through harvest and processing.
We are privileged to grow olives here, and we do our best to make the most of it, tending to our selection of some of the best European olive varieties, plus our very own Australian variety, Hardy’s Mammoth, which we believe produces the best oil of all.
